Ingredients

The sauce

  • 2 tbsp unsalted butter
  • 2 tbsp olive oil
  • 5 medium shallots, diced
  • 4 large garlic cloves, minced
  • 2 large field tomatoes, diced
  • cup capers
  • 2 tsp dried oregano
  • 2 tsp salt
  • 1 tsp cracked black pepper
  • ½ tsp chili flakes

The pasta

  • 250 g dried Spaghettini
  • 4 oz burrata cheese
  • to taste fresh basil for garnish

Instructions

  1. Heat butter and olive oil in a pot, then add shallots, garlic, diced tomatoes, capers, oregano, salt, black pepper, and chili flakes.
  2. Cook the mixture for 15-20 minutes until combined.
  3. While the sauce cooks, prepare the Spaghettini according to package instructions.
  4. Rinse and strain the pasta, then return it to the pot and add a little olive oil to prevent sticking.
  5. After 20 minutes, blend the sauce until smooth and adjust seasoning.
  6. Combine the sauce with the Spaghettini in the pot.
  7. Add half of the burrata to the pot and mix to melt.
  8. Serve with remaining burrata, fresh basil, and chili flakes.
