Ingredients

The bread

  • 1 ¾ cup gluten-free flour
  • 1 tsp baking soda
  • 1 tsp baking powder
  • ¼ tsp salt
  • 1 tsp cinnamon
  • 3 medium overripe bananas (mashed)
  • ½ cup coconut sugar
  • ½ cup melted coconut oil
  • 1 tsp vanilla
  • 2 large eggs

The cinnamon layer

  • 1 cup coconut sugar
  • ¼ cup melted coconut oil
  • 1 ½ tsp cinnamon

The icing (optional)

  • 1 cup powdered sugar
  • 1 ½ tbsp water

Instructions

  1. Preheat the oven to 350°F.
  2. In a small bowl, combine the gluten-free flour, baking powder, baking soda, salt, and cinnamon.
  3. In a large bowl, mix the mashed bananas, coconut sugar, melted coconut oil, and vanilla until well combined.
  4. Whisk in the eggs until fully incorporated.
  5. Fold the dry ingredients into the wet mixture until completely combined.
  6. Pour half of the batter into a greased bread loaf pan.
  7. In a small bowl, mix the coconut sugar, melted coconut oil, and cinnamon to create the cinnamon sugar mixture.
  8. Sprinkle half of the cinnamon sugar mixture over the first half of the batter.
  9. Pour the remaining batter on top and sprinkle the remaining cinnamon sugar mixture over it.
  10. Bake in the preheated oven for 38-42 minutes, checking with a toothpick for doneness.
  11. Once baked, allow the bread to cool completely before drizzling with icing, if desired.
