Instructions
- Preheat the oven to 350°F.
- In a small bowl, combine the gluten-free flour, baking powder, baking soda, salt, and cinnamon.
- In a large bowl, mix the mashed bananas, coconut sugar, melted coconut oil, and vanilla until well combined.
- Whisk in the eggs until fully incorporated.
- Fold the dry ingredients into the wet mixture until completely combined.
- Pour half of the batter into a greased bread loaf pan.
- In a small bowl, mix the coconut sugar, melted coconut oil, and cinnamon to create the cinnamon sugar mixture.
- Sprinkle half of the cinnamon sugar mixture over the first half of the batter.
- Pour the remaining batter on top and sprinkle the remaining cinnamon sugar mixture over it.
- Bake in the preheated oven for 38-42 minutes, checking with a toothpick for doneness.
- Once baked, allow the bread to cool completely before drizzling with icing, if desired.
