Homemade Vanilla Ice Cream

Ingredients

  • 2 ½ cups heavy cream
  • 1 cup whole or 2% milk
  • ¾ cup granulated sugar
  • tsp salt
  • 6 large egg yolks
  • 1 Tbsp vanilla extract

Instructions

  1. Heat heavy cream, milk, sugar, and salt in a saucepan until sugar dissolves.
  2. Whisk egg yolks in a bowl, then gradually add some of the hot milk mixture to temper them.
  3. Combine the egg yolk mixture back into the saucepan and cook until it thickens slightly.
  4. Remove from heat and stir in vanilla extract.
  5. Strain the mixture through a fine-mesh sieve and let it cool to room temperature.
  6. Cover with plastic wrap and chill in the refrigerator for about 6 hours.
  7. Churn the chilled mixture in an ice cream maker until thickened.
  8. Transfer the ice cream to a chilled container and freeze until firm.
