Roasted Cabbage Wedges

Ingredients

The cabbage

  • 1 head green cabbage

The seasoning

  • 2 Tbsp. olive oil
  • to taste kosher salt
  • to taste freshly-ground black pepper

Instructions

  1. Preheat the oven to 450°F and line a large baking sheet with aluminum foil.
  2. Cut the cabbage into 8 wedges, trimming the stem if desired, and arrange them on the baking sheet.
  3. Brush the top sides of the wedges with olive oil and season with salt and pepper.
  4. Turn the wedges over and repeat the oiling and seasoning on the other side.
  5. Roast the cabbage for about 10 minutes until the edges are browned, then turn each wedge and roast for another 10-15 minutes until nicely browned and cooked through.
  6. Serve immediately, garnished with lemon if desired.
