Sautéed Zucchini with Plum Tomatoes

Instructions
- Heat olive oil in a large non-stick skillet over medium-high heat.
- Add smashed garlic and sauté until golden, about 1 to 2 minutes.
- Add zucchini, salt, and pepper; cook for 4-5 minutes on each side.
- Add diced tomatoes and season with additional salt and Herbes de Provence.
- Lower the heat and simmer for 5-10 minutes.
- Divide into 4 equal portions for serving.
