Sautéed Zucchini with Plum Tomatoes

Ingredients

The vegetables

  • 1 medium zucchini
  • 5 medium plum tomatoes
  • 5 cloves garlic

The seasonings and oil

  • 2 tbsp extra virgin olive oil
  • ½ tsp Herbes de Provence
  • to taste kosher salt
  • to taste fresh pepper

Instructions

  1. Heat olive oil in a large non-stick skillet over medium-high heat.
  2. Add smashed garlic and sauté until golden, about 1 to 2 minutes.
  3. Add zucchini, salt, and pepper; cook for 4-5 minutes on each side.
  4. Add diced tomatoes and season with additional salt and Herbes de Provence.
  5. Lower the heat and simmer for 5-10 minutes.
  6. Divide into 4 equal portions for serving.
