Sauteed Zucchini Squash & Tomatoes

Ingredients

The vegetables

  • 12 oz zucchini
  • 12 oz yellow squash
  • 1 ½ cups grape tomatoes

The seasonings

  • ¾ tsp Italian seasoning
  • ¾ tsp garlic powder
  • to taste salt
  • to taste black pepper

The fats

  • 1 Tbsp olive oil
  • 1 Tbsp butter

The cheese

  • ½ cup finely shredded parmesan cheese

Instructions

  1. Heat olive oil and butter in a skillet over medium-high heat.
  2. Add zucchini and yellow squash, and sauté for 2 minutes.
  3. Add grape tomatoes, Italian seasoning, garlic powder, salt, and pepper.
  4. Continue to sauté until squash is tender and tomatoes begin to burst, about 3-5 minutes.
  5. Sprinkle in half of the parmesan cheese and toss, then sprinkle the remaining parmesan on top.
  6. Serve warm.
