Garlic Herb Sauteed Zucchini and Squash

Ingredients

The vegetables

  • 1 unit zucchini, sliced and quartered
  • 1 unit yellow squash, sliced and quartered
  • 4 oz cherry tomatoes, halved

The seasoning

  • 2 tablespoons melted butter or olive oil
  • 2 cloves garlic, minced
  • 1 pinch salt
  • to taste unit ground black pepper
  • 1 teaspoon Italian flat leaf parsley leaves, chopped
  • 1 squirt lemon juice (optional)

Instructions

  1. Heat a skillet over low to medium heat.
  2. Add the melted butter and sauté the minced garlic until slightly browned.
  3. Add the zucchini, yellow squash, and cherry tomatoes, then season with salt and black pepper.
  4. Lightly toss and sauté the mixture for 2-3 minutes.
  5. Add the chopped parsley and a squeeze of lemon juice if using.
  6. Avoid overcooking the squash to retain its crunch, then stir to combine well.
  7. Dish out and serve immediately.
