Instructions
- Pat zucchini slices dry with paper towels and set aside.
- Heat olive oil in a cast-iron skillet over medium-high heat until hot and shimmery.
- Place zucchini slices in a single layer in the skillet, avoiding overlap.
- Cook zucchini slices for 5 minutes undisturbed.
- Check the bottom of one slice for doneness; if medium to dark brown, flip all slices.
- Cook for another 5 minutes until browned on both sides and tender.
- Transfer to a plate, season with salt, and top with parmesan if desired.
