Ingredients

The base

  • 1 pound ground chicken
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 1 tablespoon olive oil
  • 1 clove garlic, minced
  • ½ small onion, sliced
  • ½ teaspoon oregano
  • ½ teaspoon dried rosemary

The toppings

  • 1 cup pizza sauce
  • ¼ cup mushrooms, sliced
  • 1 cup mozzarella cheese
  • 1 cup cheddar cheese
  • ¼ cup pepperoni

Instructions

  1. Preheat the oven to 180C/350F and grease four 2-cup ramekins.
  2. In a non-stick pan, heat olive oil, then add garlic and onion, cooking until fragrant.
  3. Add ground chicken, salt, and pepper, cooking until no longer pink, then stir in oregano and rosemary.
  4. Distribute the chicken mixture evenly among the ramekins.
  5. Top each ramekin with pizza sauce, cheddar cheese, mushrooms, mozzarella, and pepperoni.
  6. Bake for 15-20 minutes until the cheese is melted and golden.
  7. Let cool for a minute before serving.
