Ingredients

The salad

  • 2 cans chickpeas, drained and rinsed
  • 1 small cucumber, quartered lengthwise and sliced
  • ½ cup chopped fresh mint leaves

The dressing

  • ¼ cup tahini
  • 2 large lemons, juiced
  • 1 tablespoon olive oil
  • 1 tablespoon water (if needed)
  • to taste salt

Instructions

  1. Combine the chickpeas, cucumber, and mint leaves in a large bowl.
  2. In a small bowl, whisk together the tahini, lemon juice, and olive oil.
  3. Add water to the dressing if needed to achieve desired consistency.
  4. Pour the dressing into the large bowl and toss to coat the salad.
  5. Add salt to taste.
