Avocado Pesto Toast

Ingredients

The toast

  • ¼ cup pepitas (hulled pumpkin seeds)
  • 2 large ripe avocados
  • 2 medium cloves garlic
  • 2 tablespoons lemon juice
  • ¼ teaspoon salt
  • cup packed fresh basil leaves
  • 4 slices eureka! Top Seed® Organic Bread

Optional accompaniments

  • to taste cooked eggs (fried, poached or scrambled)
  • 1 small handful halved cherry tomatoes
  • to taste freshly ground black pepper
  • to taste red pepper flakes
  • to taste flaky sea salt

Instructions

  1. Toast the pepitas in a skillet over medium heat until they start popping, then cool them in a bowl.
  2. In a food processor, blend the avocados, garlic, lemon juice, and salt until smooth, scraping down the sides as needed.
  3. Add the toasted pepitas and basil to the processor and pulse until finely blended. Adjust salt to taste.
  4. Toast the bread and spread the avocado pesto generously on each slice.
  5. Serve immediately, optionally topping with eggs, tomatoes, and seasonings.
