Avocado Pesto Toast

Instructions
- Toast the pepitas in a skillet over medium heat until they start popping, then cool them in a bowl.
- In a food processor, blend the avocados, garlic, lemon juice, and salt until smooth, scraping down the sides as needed.
- Add the toasted pepitas and basil to the processor and pulse until finely blended. Adjust salt to taste.
- Toast the bread and spread the avocado pesto generously on each slice.
- Serve immediately, optionally topping with eggs, tomatoes, and seasonings.
