Roasted Tomato Avocado Toasts

baguette cut into thin slices (whole grain preferred)
The toppings

cherry tomatoes (heirloom preferred)

grapeseed oil

salt and pepper

avocados
avocados (can use 1½ if preferred)

cup
hemp seeds

¼
cup
alfalfa sprouts or any sprout or micro-green

cup
basil (chopped into thin ribbons)

nutritional yeast (optional)
Instructions
- Preheat the oven to 450ºF and place the bread slices on a baking sheet to toast.
- Remove the bread from the oven and set aside.
- In a medium bowl, toss the tomatoes with oil, salt, and pepper, then transfer to the baking sheet and roast for 15-20 minutes until soft and browned.
- In the same bowl, mash the avocados with hemp seeds, leaving some chunks.
- Spread the mashed avocado on each slice of toast and top with sprouts.
- Combine the roasted tomatoes with chopped basil and spoon them on top of the toast slices.
- Sprinkle with nutritional yeast if desired before serving.
