Vegan Potstickers

Ingredients

The filling

  • 2 tbsp sesame oil
  • 4 cloves garlic, very finely minced
  • 2 inches ginger, very finely minced
  • 2 cups shiitake mushrooms
  • 1 cup grated carrot
  • 1 cup finely chopped green cabbage
  • 2 tbsp sesame seeds
  • 2-3 tbsp soy liquid seasoning
  • 2 tbsp maple syrup
  • 1 tbsp chili paste
  • ¼ cup green onion
  • handful fresh cilantro
  • 45 g uncooked vermicelli noodles
  • 1 package vegan wonton wrappers
  • 1 cup water
  • sesame oil for cooking

The sauce

  • Refer to potsticker sauce recipe

Instructions

  1. Heat sesame oil in a large pan over medium heat, add ginger and garlic, and sauté for 1-2 minutes.
  2. Add mushrooms, cabbage, and carrots; cook for about 5 minutes until vegetables are softened.
  3. Stir in sesame seeds, soy seasoning, maple syrup, chili paste, green onions, and cilantro; cook for another 2-3 minutes until the mixture is dry.
  4. Boil water and cook vermicelli noodles according to package instructions, then mix with the vegetable filling.
  5. Spoon 1 heaped tablespoon of filling onto each wonton wrapper, brush edges with water, fold to seal.
  6. Heat oil in a skillet over medium-high heat, add potstickers, and cook until golden brown.
  7. Add water and soy seasoning to the pan, cover, and steam for 3 minutes.
  8. Serve immediately with sauce.
