Instructions
- Pulse half of the peas with sesame oil until mostly smooth.
- Sauté leeks in butter until softened, then add soy sauce, garlic, and ginger, cooking until fragrant.
- Mix the leek mixture with the whole and mashed peas and let cool slightly.
- Fill each wonton wrapper with 1 teaspoon of filling and seal the edges.
- Heat oil in a skillet, place potstickers standing up, and cook until golden brown.
- Add water, cover, and steam until cooked through, then remove the lid and crisp the bottoms.
- Prepare the dipping sauce by steeping crushed red pepper in warm sesame oil, then mixing in soy sauce, rice wine vinegar, and green onions.
