Vegetarian Potstickers

Ingredients

The filling

  • 2 cups frozen or fresh peas
  • 2 teaspoons sesame oil
  • 2 tablespoons unsalted butter
  • 2 units leeks, thinly sliced and cleaned
  • ½ teaspoon salt
  • ½ teaspoon cracked black pepper
  • 1 tablespoon soy sauce
  • 3 cloves garlic, minced
  • 1 teaspoon grated ginger
  • 24 units pot sticker wrappers or wonton wrappers

The dipping sauce

  • ½-1 teaspoon crushed red pepper
  • 2 tablespoons toasted sesame oil
  • 3 tablespoons soy sauce
  • 1 tablespoon rice wine vinegar
  • 1 tablespoon thinly sliced green onion

Instructions

  1. Pulse half of the peas with sesame oil until mostly smooth.
  2. Sauté leeks in butter until softened, then add soy sauce, garlic, and ginger, cooking until fragrant.
  3. Mix the leek mixture with the whole and mashed peas and let cool slightly.
  4. Fill each wonton wrapper with 1 teaspoon of filling and seal the edges.
  5. Heat oil in a skillet, place potstickers standing up, and cook until golden brown.
  6. Add water, cover, and steam until cooked through, then remove the lid and crisp the bottoms.
  7. Prepare the dipping sauce by steeping crushed red pepper in warm sesame oil, then mixing in soy sauce, rice wine vinegar, and green onions.
