Instructions
- Make the scallion oil by heating sunflower oil and adding sliced green onions until softened.
- Prepare the dipping sauce by mixing chopped serrano chile with sugar, soy sauce, and water.
- In a skillet, fry shallots in sunflower oil until golden, then add yellow split peas and salt, mixing well.
- Fill potsticker wrappers with a small dollop of the filling, wet the edges, and crimp to seal.
- Pan-fry the dumplings until golden, then add water, cover, and steam until cooked through.
- Serve with scallion oil and dipping sauce.
