Ingredients

The filling

  • ½ cup sunflower oil
  • ½ cup chopped shallots
  • 2 cups cooked yellow split peas
  • ½ teaspoon fine grain sea salt

The sauce

  • 1 small serrano chile
  • tablespoons sugar
  • ¼ cup soy sauce
  • ¼ cup water

The wrappers

  • 1 package round potsticker wrappers

The scallion oil

  • 8 pieces green onions/scallions
  • 4 tablespoons sunflower oil

Instructions

  1. Make the scallion oil by heating sunflower oil and adding sliced green onions until softened.
  2. Prepare the dipping sauce by mixing chopped serrano chile with sugar, soy sauce, and water.
  3. In a skillet, fry shallots in sunflower oil until golden, then add yellow split peas and salt, mixing well.
  4. Fill potsticker wrappers with a small dollop of the filling, wet the edges, and crimp to seal.
  5. Pan-fry the dumplings until golden, then add water, cover, and steam until cooked through.
  6. Serve with scallion oil and dipping sauce.
