Ingredients

Potsticker Wrappers

  • 2 cups all-purpose flour
  • ½ cup water
  • 1 pack potsticker wrapper

Potsticker Sauce

  • 2 tablespoons Chinese black vinegar
  • 1 tablespoon soy sauce
  • 1 teaspoon chili oil
  • ½ teaspoon white sesame seeds

Potsticker Filling

  • 12 oz ground pork
  • 1 leaf napa cabbage, finely sliced
  • 1 tablespoon scallion, chopped
  • 3 dashes ground white pepper
  • 1 teaspoon Shaoxing wine
  • 1 teaspoon sesame oil
  • ½ teaspoon salt
  • 1 inch ginger, peeled and grated
  • tablespoons vegetable oil
  • ½ cup water

Instructions

  1. Mix flour with water and knead until soft, then divide and roll into cylinders.
  2. Cut the dough into pieces, roll into balls, and flatten into round wrappers.
  3. Combine potsticker sauce ingredients in a bowl and stir to mix.
  4. Mix filling ingredients in a bowl until well combined.
  5. Place filling in the center of each wrapper, moisten edges, and fold to seal.
  6. Heat oil in a pan, arrange potstickers, and pan-fry until golden brown.
  7. Add water, cover the pan, and steam until water evaporates, then cook on low for an additional minute.
  8. Serve hot with dipping sauce.
