Instructions
- Whisk hot water and sugar in a bowl until dissolved, then add soy sauce, rice vinegar, ginger, sesame oil, Sriracha, garlic, and red chili flakes to make the ginger sauce.
- In a large bowl, combine pork, cabbage, mushrooms, scallions, soy sauce, cornstarch, ginger, sesame oil, mirin, garlic, salt, and pepper to create the filling.
- Test the filling by frying a small patty and adjusting seasonings as needed.
- Arrange wonton wrappers on a work surface, brush edges with water, and place 1 tablespoon of filling in the center. Fold and pleat the wrappers to seal.
- Heat oil in a frying pan, add potstickers in a single layer, and sear until golden brown.
- Pour broth into the pan, cover, and steam until the broth evaporates and potstickers are cooked through.
- Repeat the cooking process for remaining potstickers and serve with ginger sauce.
