Instructions
- 1. Cut the shrimp into small pieces and mix with scallions, salt, rice wine, sesame oil, cornstarch, and ground white pepper to form a filling.
- 2. Place a wrapper in your palm, add a heaping teaspoon of filling, moisten the edges with water, and fold to seal.
- 3. Heat oil in a non-stick skillet, arrange half the potstickers, and pan-fry until golden brown.
- 4. Add water to the skillet, cover, and steam until the water evaporates.
- 5. Repeat with the remaining potstickers and serve warm with Chinese black vinegar.
