Vegetarian Pot Stickers

Ingredients

The filling

  • pound kabocha squash
  • 3 ounces mushrooms of choice
  • 1 tablespoon freshly grated ginger
  • 2 pieces green onions
  • 2 teaspoons toasted sesame oil
  • 1 teaspoon Sriracha or chili paste
  • ¼ teaspoon white pepper
  • to taste Kosher salt
  • as needed teaspoon vegetable oil

Assembly and dipping sauce

  • 24 pieces pot sticker wrappers or wonton wrappers
  • ¼ cup soy sauce
  • 1 teaspoon Sriracha
  • 1 teaspoon sesame oil
  • 1 piece green onion for garnish
  • 1 teaspoon sesame seeds for garnish

Instructions

  1. Preheat the oven to 350°F and roast the kabocha squash for about 40 minutes until tender.
  2. Scoop out the squash and add it to a bowl.
  3. In a skillet, heat oil and sauté green onions, mushrooms, ginger, and salt until softened, then mix with the squash.
  4. Assemble the pot stickers by placing a teaspoon of filling in the center of a wrapper, moisten the edges, and seal.
  5. Whisk together the soy sauce, Sriracha, and sesame oil for the dipping sauce and set aside.
  6. Heat oil in a skillet, add pot stickers standing up, and fry until golden brown.
  7. Add water to the skillet, cover, and steam until cooked through, then serve with the dipping sauce and garnishes.
