Instructions
- Preheat the oven to 350°F and roast the kabocha squash for about 40 minutes until tender.
- Scoop out the squash and add it to a bowl.
- In a skillet, heat oil and sauté green onions, mushrooms, ginger, and salt until softened, then mix with the squash.
- Assemble the pot stickers by placing a teaspoon of filling in the center of a wrapper, moisten the edges, and seal.
- Whisk together the soy sauce, Sriracha, and sesame oil for the dipping sauce and set aside.
- Heat oil in a skillet, add pot stickers standing up, and fry until golden brown.
- Add water to the skillet, cover, and steam until cooked through, then serve with the dipping sauce and garnishes.
