Dry-Rubbed Smoked Whole Chicken

Ingredients

The chicken

  • 1 whole chicken (3-4 pounds)

The rub

  • 3 tablespoons olive oil
  • 4 tablespoons smoked chicken dry rub
  • 2 tablespoons garlic powder
  • 1 tablespoon dark brown sugar
  • 1 teaspoon paprika
  • 1 teaspoon kosher salt
  • ½ teaspoon ground pepper
  • teaspoon cayenne
  • 1 tablespoon onion powder
  • 1 teaspoon chili powder

Instructions

  1. Preheat the smoker to 275ºF.
  2. Prepare the chicken by removing innards and patting it dry.
  3. Rub olive oil all over the chicken, including under the skin.
  4. Sprinkle the chicken with the dry rub, ensuring it's well-coated.
  5. Place the chicken on the smoker and spray with non-stick cooking spray.
  6. Smoke the chicken for 2 hours, then spray again and continue smoking for another 1-2 hours until it reaches 165ºF internally.
  7. Remove the chicken from the smoker and let it rest for 15 minutes before carving.
