Instructions
- Preheat the smoker to 275ºF.
- Prepare the chicken by removing innards and patting it dry.
- Rub olive oil all over the chicken, including under the skin.
- Sprinkle the chicken with the dry rub, ensuring it's well-coated.
- Place the chicken on the smoker and spray with non-stick cooking spray.
- Smoke the chicken for 2 hours, then spray again and continue smoking for another 1-2 hours until it reaches 165ºF internally.
- Remove the chicken from the smoker and let it rest for 15 minutes before carving.
