Instructions
- Preheat the smoker to 225 degrees.
- Pat the chicken dry and remove the inner cavity contents.
- For the dry rub, drizzle the chicken with olive oil and rub the spices into the skin.
- If not spatchcocking, tie the legs with butcher's twine.
- For the chipotle citrus marinade, blend all marinade ingredients until smooth and brush over the chicken.
- Place the chicken in the smoker and smoke until it reaches an internal temperature of 165 degrees.
- For crispy skin, increase the smoker temperature to 350 degrees when the chicken reaches 150 degrees.
- Let the chicken rest for 15-20 minutes before slicing.
