Ingredients

The chicken

  • 4.5-5 pound whole chicken

The dry rub

  • 1 tablespoon olive oil
  • tablespoons brown sugar
  • 2 teaspoons smoked paprika
  • 2 teaspoons chili powder
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • to taste salt and pepper

The chipotle citrus marinade

  • 7 oz Chipotles in Adobo Sauce
  • 2 tablespoons fresh lime juice
  • 2 tablespoons fresh orange juice
  • ¼ cup fresh cilantro
  • 3 cloves garlic
  • ¼ cup chopped onions
  • ½ teaspoon cumin
  • ½ teaspoon smoked paprika
  • to taste salt and pepper

Instructions

  1. Preheat the smoker to 225 degrees.
  2. Pat the chicken dry and remove the inner cavity contents.
  3. For the dry rub, drizzle the chicken with olive oil and rub the spices into the skin.
  4. If not spatchcocking, tie the legs with butcher's twine.
  5. For the chipotle citrus marinade, blend all marinade ingredients until smooth and brush over the chicken.
  6. Place the chicken in the smoker and smoke until it reaches an internal temperature of 165 degrees.
  7. For crispy skin, increase the smoker temperature to 350 degrees when the chicken reaches 150 degrees.
  8. Let the chicken rest for 15-20 minutes before slicing.
