Instructions
- Preheat your smoker to 250° Fahrenheit.
- Mix all seasoning ingredients in a small bowl.
- Prepare the chicken by removing packaging and giblets, then place it on a large plate.
- Rub the seasoning mix all over the chicken.
- Smoke the chicken at 250° F for one hour.
- Increase the grill/smoker temperature to high (400°-450° F) and cook for an additional 45-65 minutes until the internal temperature reaches 160° F.
- Remove the chicken from the smoker and let it rest for 15 minutes before serving.
