Instructions
- Soak wood chunks in apple juice or water overnight.
- Rinse the chicken, trim excess skin and fat, and clean the giblets.
- Pat the chicken dry, drizzle with oil, and season inside and out with salt, pepper, and Creole seasoning.
- Tie the legs together with kitchen string and refrigerate for 2 hours or overnight.
- Prepare the grill for smoking with a smoke box made from aluminum foil and wet wood chunks.
- Preheat the grill to 225°F to 250°F.
- Place the chicken breast side up in the grill and add a bowl of water if desired.
- Cook for 4-5 hours until the internal temperature reaches 165°F.
- Let the chicken rest for 15-20 minutes before carving and serving.
