Ingredients

The chicken

  • 1 whole chicken (3-5 pounds)

The rub

  • ¼ cup cooking oil
  • ½ tablespoon salt
  • 2 teaspoons freshly ground black pepper
  • 2 tablespoons Creole Cajun seasoning

The wood for smoking

  • 4-5 cups wood chunks
  • 1 cup apple juice or water

Instructions

  1. Soak wood chunks in apple juice or water overnight.
  2. Rinse the chicken, trim excess skin and fat, and clean the giblets.
  3. Pat the chicken dry, drizzle with oil, and season inside and out with salt, pepper, and Creole seasoning.
  4. Tie the legs together with kitchen string and refrigerate for 2 hours or overnight.
  5. Prepare the grill for smoking with a smoke box made from aluminum foil and wet wood chunks.
  6. Preheat the grill to 225°F to 250°F.
  7. Place the chicken breast side up in the grill and add a bowl of water if desired.
  8. Cook for 4-5 hours until the internal temperature reaches 165°F.
  9. Let the chicken rest for 15-20 minutes before carving and serving.
