Instructions
- Combine water, sugar, salt, bay leaves, lemon, thyme, garlic, and sage in a saucepan over medium heat until the sugar dissolves.
- Cool the brine completely and add it to a large bowl or container.
- Submerge the chicken in the brine, cover, and refrigerate overnight.
- Remove the chicken from the brine, rinse, and pat dry.
- Rub the chicken with olive oil and coat with dry rub.
- Preheat the smoker to 200 to 225 degrees Fahrenheit.
- Place the chicken in the smoker and cover.
- Smoke the chicken until it reaches an internal temperature of 165 degrees Fahrenheit, about 75 minutes.
- Let the chicken rest for 10 minutes before slicing.
