Smoked Chicken Breast

Ingredients

Brine

  • 1 gallon water
  • ½ cup granulated sugar
  • ½ cup salt
  • 2 pieces bay leaves
  • 1 piece lemon, sliced
  • 2 sprigs fresh thyme
  • 4 cloves garlic
  • 1 tablespoon fresh sage leaves

Chicken

  • 4 pieces boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 tablespoon homemade dry rub or store-bought

Instructions

  1. Combine water, sugar, salt, bay leaves, lemon, thyme, garlic, and sage in a saucepan over medium heat until the sugar dissolves.
  2. Cool the brine completely and add it to a large bowl or container.
  3. Submerge the chicken in the brine, cover, and refrigerate overnight.
  4. Remove the chicken from the brine, rinse, and pat dry.
  5. Rub the chicken with olive oil and coat with dry rub.
  6. Preheat the smoker to 200 to 225 degrees Fahrenheit.
  7. Place the chicken in the smoker and cover.
  8. Smoke the chicken until it reaches an internal temperature of 165 degrees Fahrenheit, about 75 minutes.
  9. Let the chicken rest for 10 minutes before slicing.
