Ingredients

The chicken

  • 2¼ – 2½ lbs chicken breasts

The dry rub

  • 1 tablespoon olive oil
  • 2 teaspoons kosher salt
  • 1 teaspoon oregano
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • ½ teaspoon black pepper
  • ½ teaspoon smoked paprika

Instructions

  1. Pat the chicken breasts dry with paper towels.
  2. Mix kosher salt, oregano, garlic powder, onion powder, black pepper, and smoked paprika in a bowl to create the dry rub.
  3. Rub olive oil on all sides of the chicken breasts.
  4. Generously apply the dry rub mixture to both sides of the chicken.
  5. If possible, let the chicken sit for 30 minutes to allow the rub to penetrate.
  6. Preheat the smoker to 250°F and add wood chips.
  7. Place the chicken in the smoker with a temperature probe in the thickest part.
  8. Cook the chicken for 1½ hours or until it reaches an internal temperature of 150°F.
  9. Wrap the chicken in a foil tray and continue cooking until it reaches 165°F.
  10. Remove from the smoker and let the chicken rest for 10 minutes before serving.
