Smoked Chicken Breast

smoked paprika
Instructions
- Pat the chicken breasts dry with paper towels.
- Mix kosher salt, oregano, garlic powder, onion powder, black pepper, and smoked paprika in a bowl to create the dry rub.
- Rub olive oil on all sides of the chicken breasts.
- Generously apply the dry rub mixture to both sides of the chicken.
- If possible, let the chicken sit for 30 minutes to allow the rub to penetrate.
- Preheat the smoker to 250°F and add wood chips.
- Place the chicken in the smoker with a temperature probe in the thickest part.
- Cook the chicken for 1½ hours or until it reaches an internal temperature of 150°F.
- Wrap the chicken in a foil tray and continue cooking until it reaches 165°F.
- Remove from the smoker and let the chicken rest for 10 minutes before serving.
