Smoked Chicken Breast

The chicken

The seasoning

Instructions
- Remove chicken breast from packaging and place in a single layer on a baking sheet.
- Brine the chicken breasts for around 3-4 hours, then remove excess moisture.
- Let the chicken sit in the fridge for a minimum of 3 hours or overnight to air-dry.
- Preheat the smoker to 250℉/120℃ using your choice of wood.
- In a large bowl, season the chicken with spices and drizzle with oil.
- Place the chicken breasts directly on the smoker racks.
- Cover the smoker and smoke the chicken for about 90 minutes, moving it around for even cooking.
- Check the internal temperature, which should reach 165℉/75℃, then remove from the smoker.
- Serve with your choice of sauce.
