Ingredients

The chicken

  • 3-3½ pounds boneless chicken breast

The seasoning

  • 1-2 tablespoons Italian seasoning or Creole seasoning

The sauces

  • to taste mustard, white BBQ, or BBQ sauce

Instructions

  1. Remove chicken breast from packaging and place in a single layer on a baking sheet.
  2. Brine the chicken breasts for around 3-4 hours, then remove excess moisture.
  3. Let the chicken sit in the fridge for a minimum of 3 hours or overnight to air-dry.
  4. Preheat the smoker to 250℉/120℃ using your choice of wood.
  5. In a large bowl, season the chicken with spices and drizzle with oil.
  6. Place the chicken breasts directly on the smoker racks.
  7. Cover the smoker and smoke the chicken for about 90 minutes, moving it around for even cooking.
  8. Check the internal temperature, which should reach 165℉/75℃, then remove from the smoker.
  9. Serve with your choice of sauce.
