Ingredients

The meats

  • 8 ounces prosciutto or serrano ham
  • 8 ounces capicola or bresaola
  • 8 ounces soppressata or genoa salami
  • 4 ounces duck pâté or chicken liver pâté

The cheese

  • 1 (5 ounce) log chevre
  • 1 (8 ounce) wedge Gouda or Fontina
  • 1 (4 ounce) wedge Roquefort blue cheese
  • 4 ounces Cheddar cheese

The spreads

  • 1 tablespoon butter (softened)
  • 1 piece fresh honeycomb
  • 1 jar fig jam
  • 1 tablespoon wholegrain mustard

The fillers

  • 1 cup red grapes
  • 1 cup apple slices (mix of red and green)
  • 1 cup cherries or berries
  • 1 cup cucumbers (sliced)
  • 1 cup carrot slices (heirloom if possible)
  • 1 cup olives and cornichons
  • 1 cup pickles
  • 1 cup Marcona almonds or other nuts
  • 1 cup toasted baguette slices
  • 1 cup flatbread crackers or pretzels

The garnishes

  • to taste fresh herbs

Instructions

  1. Select a board and gather the meats, placing one type in each of the four quadrants of the board.
  2. Position the corresponding cheese next to each type of meat in the quadrants.
  3. Use small bowls for jams, mustards, cherries, and olives to fill larger gaps on the board.
  4. Fill in remaining spaces with fruits, nuts, crackers, and other ingredients, layering as needed.
  5. Garnish with fresh herbs and add utensils for serving.
