shredded and peeled apple
Instructions
- Chop the pecans and almonds, then mix with shredded coconut, coconut sugar, cinnamon, salt, and cardamom in a bowl.
- Add melted coconut oil to the mixture and set aside.
- Preheat the oven to 350°F and prepare a muffin pan with liners or grease it.
- In a bowl, combine almond flour, cinnamon, baking soda, cream of tartar, and salt.
- In another bowl, mix coconut sugar, eggs, and vanilla until the sugar dissolves.
- Combine the dry ingredients with the wet ingredients and fold in the shredded apple.
- Scoop the batter into muffin liners and sprinkle the streusel topping on each.
- Gently press the streusel into the batter.
- Bake for 22 to 25 minutes, rotating the tray halfway through.
- Cool the muffins on a wire rack.
