Ingredients

Paleo Streusel Topping

  • ¼ cup whole raw pecans
  • ¼ cup whole raw almonds
  • ¼ cup unsweetened shredded coconut
  • ¼ cup coconut sugar or maple sugar
  • ½ teaspoon ground cinnamon
  • ½ teaspoon Diamond Crystal kosher salt
  • ¼ teaspoon ground cardamom or ground nutmeg
  • 2 tablespoons melted refined coconut oil or melted ghee

Apple Muffins

  • cups finely ground almond flour
  • 1 teaspoon ground cinnamon
  • 1 teaspoon baking soda
  • ½ teaspoon cream of tartar
  • ¼ teaspoon Diamond Crystal kosher salt
  • ¾ cup coconut sugar or maple sugar
  • 4 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup shredded and peeled apple

Instructions

  1. Chop the pecans and almonds, then mix with shredded coconut, coconut sugar, cinnamon, salt, and cardamom in a bowl.
  2. Add melted coconut oil to the mixture and set aside.
  3. Preheat the oven to 350°F and prepare a muffin pan with liners or grease it.
  4. In a bowl, combine almond flour, cinnamon, baking soda, cream of tartar, and salt.
  5. In another bowl, mix coconut sugar, eggs, and vanilla until the sugar dissolves.
  6. Combine the dry ingredients with the wet ingredients and fold in the shredded apple.
  7. Scoop the batter into muffin liners and sprinkle the streusel topping on each.
  8. Gently press the streusel into the batter.
  9. Bake for 22 to 25 minutes, rotating the tray halfway through.
  10. Cool the muffins on a wire rack.
