Instructions
- Preheat the oven to 350°F.
- Grate the apple using the large side of a box grater.
- In a large bowl, mix the egg, grated apple, yogurt, applesauce, white sugar, brown sugar, oil, nutmeg, and cinnamon until well combined.
- Add the vanilla and mix again. Gradually add the flour, one cup at a time, mixing until just combined.
- Add the baking soda and baking powder, mixing until incorporated. Stir in the ground flaxseeds if using.
- For the streusel topping, mix flour, cinnamon, and sugar in a small bowl. Cut in the cold butter until the mixture resembles coarse crumbs.
- Scoop the muffin batter into a lined muffin pan, filling each cup about ¾ full. Sprinkle the streusel topping on each muffin.
- Bake for 15-18 minutes or until a toothpick inserted comes out clean.
