Ingredients

The muffins

  • 1 large Egg
  • 1 medium Apple (Honeycrisp or Pink Lady)
  • 5.3 ounces Vanilla Greek Yogurt
  • ¼ cup Oil (Canola, Vegetable or Avocado)
  • ½ cup Unsweetened Applesauce
  • ½ cup White Sugar
  • ¼ cup Brown Sugar
  • 1 tsp Cinnamon
  • ¼ tsp Nutmeg
  • 1 tsp Vanilla
  • 2 ¼ cups Flour
  • ¼ cup Ground Flaxseeds (optional)
  • 1 tsp Baking Powder
  • 1 tsp Baking Soda

Streusel Topping

  • 2 tbsp Flour
  • 5 tbsp Sugar
  • ½ tsp Cinnamon
  • 2 tbsp Salted Butter (cold)

Instructions

  1. Preheat the oven to 350°F.
  2. Grate the apple using the large side of a box grater.
  3. In a large bowl, mix the egg, grated apple, yogurt, applesauce, white sugar, brown sugar, oil, nutmeg, and cinnamon until well combined.
  4. Add the vanilla and mix again. Gradually add the flour, one cup at a time, mixing until just combined.
  5. Add the baking soda and baking powder, mixing until incorporated. Stir in the ground flaxseeds if using.
  6. For the streusel topping, mix flour, cinnamon, and sugar in a small bowl. Cut in the cold butter until the mixture resembles coarse crumbs.
  7. Scoop the muffin batter into a lined muffin pan, filling each cup about ¾ full. Sprinkle the streusel topping on each muffin.
  8. Bake for 15-18 minutes or until a toothpick inserted comes out clean.
