Ingredients

The Muffins

  • 2 cups flour
  • 2 teaspoons baking powder
  • 2 teaspoons cinnamon

  • ¾ cup cane sugar
  • cup vegan butter
  • 1 teaspoon vanilla extract
  • ½ cup unsweetened applesauce
  • ½ cup vegan milk
  • 1 cup apples

The Streusel Topping

  • ½ cup flour
  • 1 teaspoon cinnamon
  • ¼ cup cane sugar
  • ¼ cup vegan butter

Instructions

  1. Preheat the oven and prepare the muffin pan.
  2. Whisk together the dry ingredients in a medium bowl.
  3. In a large bowl, mix the sugar, vegan butter, and vanilla until combined.
  4. Add applesauce and vegan milk to the wet mixture and mix well.
  5. Combine the dry ingredients with the wet ingredients without overmixing, then fold in the apples.
  6. Prepare the streusel topping by mixing the ingredients until crumbly.
  7. Scoop the muffin batter into liners and top with streusel.
  8. Bake at a high temperature, then reduce and continue baking until done.
  9. Cool the muffins in the pan before transferring to a wire rack.
