Ingredients

The muffins

  • 3 large eggs
  • 2 large egg whites
  • 1 ¼ cups skim milk
  • 2 teaspoons vanilla extract
  • 2 tablespoons granulated sugar
  • 1 ½ teaspoons cinnamon
  • 12 slices light wheat bread, cubed
  • 1 medium apple, peeled and cubed

The streusel topping

  • 2 tablespoons cold light butter
  • 2 tablespoons flour
  • 2 tablespoons packed brown sugar
  • a pinch salt
  • a pinch cinnamon

Instructions

  1. Preheat the oven to 350°F and prepare a muffin tin with cooking spray.
  2. In a mixing bowl, whisk together the eggs, egg whites, milk, vanilla, sugar, and cinnamon.
  3. Add the cubed bread and stir until soaked, then mix in the apple cubes.
  4. Spoon the mixture into the muffin tin and press down lightly.
  5. In a separate bowl, combine butter, flour, brown sugar, cinnamon, and salt to make crumbs.
  6. Sprinkle the crumb mixture over the muffin batter.
  7. Bake for 25 minutes until cooked through and golden on top.
