Baked Apple French Toast

Ingredients

The base

  • 6-8 cups day-old whole grain bread (cubed)
  • 7 large eggs
  • 2 cups milk (lightly sweetened vanilla almond milk recommended)
  • ¾ tsp cinnamon (divided)

The apples

  • 4 medium apples (cored, peeled, and sliced into wedges)

The toppings

  • 2 Tbsp butter (Earth Balance recommended)
  • ½ cup brown sugar (divided)

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a 9x13 baking pan.
  2. Add enough bread cubes to cover the bottom of the pan generously.
  3. In a mixing bowl, whisk together the eggs, milk, and 2/3 of the cinnamon.
  4. Pour the egg mixture over the bread and press down to soak.
  5. In a skillet, sauté the apples with butter and the remaining cinnamon until tender.
  6. Add brown sugar to the apples and cook until slightly caramelized.
  7. Check the bread to ensure all pieces are soaked, flipping any dry cubes.
  8. Sprinkle the remaining brown sugar on top of the bread.
  9. Spoon 3/4 of the apples over the bread and push them down into the cracks.
  10. Bake for 45 minutes to 1 hour until golden brown and set.
  11. Serve immediately, topped with remaining apples and maple syrup.
