Instructions
- Heat a large cast iron pan over medium heat.
- Add the sliced turkey sausage and cook for 4 minutes until browned.
- Add the frozen peppers and onions, cooking for an additional 4 minutes until soft.
- Add the frozen diced potatoes, salt, chili powder, onion powder, and black pepper. Cook for 10 to 12 minutes until tender.
- In a separate skillet, cook the eggs sunny side up for 4 minutes until the whites are opaque.
- In a small bowl, mix sour cream, Sriracha sauce, olive oil, lemon juice, chipotle chili pepper powder, salt, and black pepper until combined.
- Serve the eggs on top of the potato mixture and enjoy with the chipotle sauce.
