Ingredients

The skillet

  • 4 cups Frozen Diced Hash Brown Potatoes
  • 2 cups Frozen Pepper & Onion Strips
  • 4 large Eggs
  • 13 oz Turkey Sausage, sliced
  • 1 Tbsp Olive Oil
  • 1 tsp Salt
  • 1 tsp Chipotle Chili Pepper Powder
  • ½ tsp Onion Powder
  • ½ tsp Black Pepper

The chipotle sauce

  • ½ cup Sour Cream
  • 1 Tbsp Sriracha Sauce
  • 1 tsp Olive Oil
  • ½ tsp Lemon Juice
  • ½ tsp Chipotle Chili Pepper Powder
  • ¼ tsp Salt
  • ¼ tsp Black Pepper

Instructions

  1. Heat a large cast iron pan over medium heat.
  2. Add the sliced turkey sausage and cook for 4 minutes until browned.
  3. Add the frozen peppers and onions, cooking for an additional 4 minutes until soft.
  4. Add the frozen diced potatoes, salt, chili powder, onion powder, and black pepper. Cook for 10 to 12 minutes until tender.
  5. In a separate skillet, cook the eggs sunny side up for 4 minutes until the whites are opaque.
  6. In a small bowl, mix sour cream, Sriracha sauce, olive oil, lemon juice, chipotle chili pepper powder, salt, and black pepper until combined.
  7. Serve the eggs on top of the potato mixture and enjoy with the chipotle sauce.
