Turkey Hash

Ingredients

The hash

  • 3 pieces white potatoes
  • 10 pieces turkey breakfast sausages
  • 2 tablespoons lard, ghee or coconut oil
  • ¾ teaspoon sea salt
  • ½ teaspoon garlic powder
  • 1 teaspoon dried minced onion or onion flakes

The eggs

  • 4 pieces eggs

Instructions

  1. Heat a 12 inch skillet over medium heat.
  2. Scrub and cut the potatoes into 1 inch pieces, then chop finely in a food processor.
  3. Squeeze the chopped potatoes in a towel to remove excess water.
  4. Cut the sausages into 1 inch pieces and chop finely in the food processor.
  5. Add the lard, ghee, or coconut oil to the skillet and heat for 1 minute.
  6. Add the potatoes and turkey sausage to the skillet, spreading them evenly.
  7. Sprinkle sea salt and garlic powder over the mixture.
  8. Set a timer for 5 minutes and do not disturb the hash.
  9. After 5 minutes, stir the hash and set the timer for another 5 minutes without disturbing.
  10. After the second 5 minutes, add onion flakes and stir well, then set the timer for another 5 minutes.
  11. After the third 5 minutes, make 4 wells in the hash, add a teaspoon of fat to each, and crack an egg into each well.
  12. Reduce the heat to low, cover slightly cracked, and monitor until eggs are set.
  13. Serve immediately.
