Turkey Hash

Instructions
- Heat a 12 inch skillet over medium heat.
- Scrub and cut the potatoes into 1 inch pieces, then chop finely in a food processor.
- Squeeze the chopped potatoes in a towel to remove excess water.
- Cut the sausages into 1 inch pieces and chop finely in the food processor.
- Add the lard, ghee, or coconut oil to the skillet and heat for 1 minute.
- Add the potatoes and turkey sausage to the skillet, spreading them evenly.
- Sprinkle sea salt and garlic powder over the mixture.
- Set a timer for 5 minutes and do not disturb the hash.
- After 5 minutes, stir the hash and set the timer for another 5 minutes without disturbing.
- After the second 5 minutes, add onion flakes and stir well, then set the timer for another 5 minutes.
- After the third 5 minutes, make 4 wells in the hash, add a teaspoon of fat to each, and crack an egg into each well.
- Reduce the heat to low, cover slightly cracked, and monitor until eggs are set.
- Serve immediately.
