Instructions
- 1. Boil salted water in a large pot.
- 2. Add chopped cauliflower and boil until knife-tender, about 10 minutes.
- 3. Drain the cauliflower and transfer it to a food processor.
- 4. Puree the cauliflower with butter, roasted garlic, Dijon mustard, salt, and pepper until smooth.
- 5. Season to taste and garnish with chives if desired.
