Mashed Cauliflower

Ingredients

The mash

  • 1 head cauliflower
  • 2 tablespoons butter
  • 7 cloves roasted garlic
  • ⅛ to ¼ teaspoon Dijon mustard
  • ¼ to ½ teaspoon sea salt
  • to taste freshly ground black pepper

Garnish

  • to taste chives

Instructions

  1. 1. Boil salted water in a large pot.
  2. 2. Add chopped cauliflower and boil until knife-tender, about 10 minutes.
  3. 3. Drain the cauliflower and transfer it to a food processor.
  4. 4. Puree the cauliflower with butter, roasted garlic, Dijon mustard, salt, and pepper until smooth.
  5. 5. Season to taste and garnish with chives if desired.
