Mashed Cauliflower

Ingredients

  • 1 head cauliflower
  • 2 tbsp butter or ghee
  • 5 cloves roasted garlic
  • ½ tsp sea salt
  • ½ tsp black pepper

Instructions

  1. Bring a pot of water to a boil.
  2. Chop the cauliflower into florets and boil for 10 minutes until soft.
  3. Drain the cauliflower.
  4. Blend all ingredients in a food processor until smooth and creamy.
  5. Transfer to a serving bowl and add more butter on top if desired. Serve hot.
