Mashed Cauliflower

Ingredients

The cauliflower

  • 2 pounds head of cauliflower, chopped into florets

The seasoning

  • 1 tablespoon extra-virgin olive oil
  • 5 cloves garlic, minced
  • ½ teaspoon fine sea salt, plus more to taste
  • ¼ teaspoon ground black pepper

Instructions

  1. Fill a large saucepan with about an inch of water and insert a steamer basket.
  2. Bring the water to a boil and add the cauliflower florets.
  3. Reduce the heat to a simmer and cover, allowing the cauliflower to steam for 10 to 15 minutes until fork tender.
  4. Drain the cauliflower and set it aside.
  5. Return the pan to the heat and add the olive oil and garlic, sautéing briefly until softened and fragrant, about 2 minutes.
  6. Transfer the cauliflower and sautéed garlic to a food processor, season with salt and pepper, then process until smooth.
  7. Taste and adjust the seasoning as desired, adding more salt or any extra add-ins.
  8. Serve warm, garnished with toppings if desired.
