Fluffy Mashed Cauliflower

Ingredients

The mash

  • 1 head cauliflower
  • 2 tbsp butter
  • 2-3 cloves garlic
  • to taste sea salt
  • to taste black pepper

The garnish

  • 1 tsp finely chopped thyme

Instructions

  1. Trim the leaves off the cauliflower, remove the core, and cut into florets.
  2. Bring a couple of inches of water to a boil in a medium pot and place a steamer insert in the pot.
  3. Add the cauliflower florets and steam for 8-10 minutes or until fork tender.
  4. While the cauliflower is steaming, heat the butter in a small saucepan on medium-low heat.
  5. Add the garlic to the butter and cook until fragrant, then remove from heat.
  6. Remove the steamed cauliflower from the pot and place it in a food processor.
  7. Add the garlic and a pinch of sea salt to the food processor and blend until smooth.
  8. Taste and adjust seasonings as needed.
  9. Transfer to a serving bowl, top with an extra pat of butter, sprinkle with black pepper and fresh thyme, then serve.
