Spiced Roasted Carrots with Lemony Whipped Feta

Ingredients

The Carrots

  • 1 pound Carrots
  • 3 tablespoons Olive Oil
  • 2 tablespoons Honey
  • ½ teaspoon Aleppo Pepper
  • 1 teaspoon Cumin
  • ½ teaspoon Paprika
  • ½ teaspoon Cinnamon
  • to taste Sea Salt
  • to taste Ground Black Pepper

The Whipped Feta

  • 8 ounces Feta Cheese
  • 1 cup Greek Yogurt
  • 1 lemon juiced
  • 3 tablespoons Olive Oil
  • 2 cloves Garlic

Optional Garnishes

  • 1 tablespoon Fresh Parsley
  • ½ teaspoon Aleppo Pepper
  • 1 drizzle Olive Oil
  • 1 tablespoon Pomegranate Arils

Instructions

  1. Preheat the oven to 400°F.
  2. Wash the carrots and cut them if desired, then place them in a bowl with olive oil, honey, and spices.
  3. Toss the carrots to coat them evenly with the seasoning blend.
  4. Line a baking sheet with parchment paper and spread the carrots evenly on it.
  5. Roast the carrots for 20-25 minutes until fork tender, tossing halfway through.
  6. While the carrots are roasting, prepare the whipped feta by blending feta cheese, Greek yogurt, lemon juice, olive oil, and garlic in a food processor until smooth.
  7. If a thinner consistency is desired, add water and blend again.
  8. Once the carrots are done, spread the whipped feta on a plate and top with the roasted carrots.
  9. Garnish with parsley, olive oil, Aleppo pepper, and pomegranate arils if desired, then serve.
