Instructions
- Preheat the oven to 400°F.
- Wash the carrots and cut them if desired, then place them in a bowl with olive oil, honey, and spices.
- Toss the carrots to coat them evenly with the seasoning blend.
- Line a baking sheet with parchment paper and spread the carrots evenly on it.
- Roast the carrots for 20-25 minutes until fork tender, tossing halfway through.
- While the carrots are roasting, prepare the whipped feta by blending feta cheese, Greek yogurt, lemon juice, olive oil, and garlic in a food processor until smooth.
- If a thinner consistency is desired, add water and blend again.
- Once the carrots are done, spread the whipped feta on a plate and top with the roasted carrots.
- Garnish with parsley, olive oil, Aleppo pepper, and pomegranate arils if desired, then serve.
