Ingredients

Roasted Carrots

  • 2 pounds whole carrots
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon honey
  • ½ teaspoon kosher salt
  • 1 medium lemon (juiced and zested)
  • to taste freshly ground black pepper

Whipped Feta and Toppings

  • 6 ounces feta
  • 5.3 ounces plain Greek yogurt
  • 1 tablespoon honey (plus more for drizzling)
  • ¼ cup pomegranate seeds
  • ¼ cup roughly chopped pistachios
  • optional dill sprigs for garnishing

Instructions

  1. Preheat the oven to 375°F and line a half sheet pan with parchment paper.
  2. Add the whole carrots to the sheet pan.
  3. In a small bowl, whisk together the olive oil and honey, then drizzle over the carrots and coat them well with your hands.
  4. Sprinkle the carrots with salt and roast them at 375°F for 30 minutes, turning halfway through.
  5. After 30 minutes, reduce the heat to 350°F and roast for another 15 minutes until tender and lightly charred.
  6. Squeeze lemon juice over the carrots and add freshly ground black pepper to taste.
  7. While the carrots are roasting, prepare the whipped feta by blending feta, Greek yogurt, honey, and lemon zest in a food processor until smooth.
  8. Spread the whipped feta onto a serving platter, top with the roasted carrots, and sprinkle with pomegranate seeds and pistachios. Drizzle with honey and garnish with dill sprigs if desired.
