Honey Roasted Carrots with Whipped Feta

Instructions
- Preheat the oven to 375°F and line a half sheet pan with parchment paper.
- Add the whole carrots to the sheet pan.
- In a small bowl, whisk together the olive oil and honey, then drizzle over the carrots and coat them well with your hands.
- Sprinkle the carrots with salt and roast them at 375°F for 30 minutes, turning halfway through.
- After 30 minutes, reduce the heat to 350°F and roast for another 15 minutes until tender and lightly charred.
- Squeeze lemon juice over the carrots and add freshly ground black pepper to taste.
- While the carrots are roasting, prepare the whipped feta by blending feta, Greek yogurt, honey, and lemon zest in a food processor until smooth.
- Spread the whipped feta onto a serving platter, top with the roasted carrots, and sprinkle with pomegranate seeds and pistachios. Drizzle with honey and garnish with dill sprigs if desired.
