Roasted Carrot and Feta Salad

Instructions
- Preheat the oven to 400ºF.
- Peel and slice the carrots into one-inch pieces, cutting thicker ends lengthwise.
- Line a baking sheet with parchment paper and place the carrots on it.
- Drizzle olive oil over the carrots, add salt and pepper, and toss to coat.
- Roast the carrots in the preheated oven for 40 minutes, stirring halfway through.
- After roasting, let the carrots cool slightly.
- While cooling, chop the parsley and crumble the feta.
- Combine the warm carrots, parsley, and feta in a bowl, season with salt and pepper, and toss to combine.
- Serve warm.
