Roasted Carrot and Feta Salad

Ingredients

  • 2 lbs. carrots
  • 2 Tbsp olive oil
  • to taste salt and pepper
  • ½ bunch fresh parsley
  • ¼ cup crumbled feta cheese

Instructions

  1. Preheat the oven to 400ºF.
  2. Peel and slice the carrots into one-inch pieces, cutting thicker ends lengthwise.
  3. Line a baking sheet with parchment paper and place the carrots on it.
  4. Drizzle olive oil over the carrots, add salt and pepper, and toss to coat.
  5. Roast the carrots in the preheated oven for 40 minutes, stirring halfway through.
  6. After roasting, let the carrots cool slightly.
  7. While cooling, chop the parsley and crumble the feta.
  8. Combine the warm carrots, parsley, and feta in a bowl, season with salt and pepper, and toss to combine.
  9. Serve warm.
