Ingredients

The carrots

  • 2 pounds carrots, scrubbed and cleaned

The cooking fats

  • 3 tbsp oil of choice or butter

The sweet and tangy mix

  • 3 tbsp honey
  • 2 teaspoons balsamic vinegar
  • pinch sea salt

The toppings

  • ½ cup feta cheese, crumbled
  • optional pomegranate

Instructions

  1. 1. Heat a large cast iron skillet over medium heat and add the oil or butter.
  2. 2. Once the skillet is hot, add the carrots and stir to coat them well.
  3. 3. Cook the carrots for about 5-7 minutes until they start to char.
  4. 4. Add 2-3 tablespoons of water and mix well.
  5. 5. Reduce the heat to low and cover for 5 minutes.
  6. 6. Remove the cover and toss the carrots again until crispy.
  7. 7. Stir in the honey and balsamic vinegar.
  8. 8. Once cooled, top with crumbled feta cheese and pomegranate if using.
