Caramelized Honey Roasted Carrots With Feta

carrots, scrubbed and cleaned

oil of choice or butter
The sweet and tangy mix

honey

balsamic vinegar

The toppings

feta cheese, crumbled

pomegranate
Instructions
- 1. Heat a large cast iron skillet over medium heat and add the oil or butter.
- 2. Once the skillet is hot, add the carrots and stir to coat them well.
- 3. Cook the carrots for about 5-7 minutes until they start to char.
- 4. Add 2-3 tablespoons of water and mix well.
- 5. Reduce the heat to low and cover for 5 minutes.
- 6. Remove the cover and toss the carrots again until crispy.
- 7. Stir in the honey and balsamic vinegar.
- 8. Once cooled, top with crumbled feta cheese and pomegranate if using.
