Instructions
- Combine ground chicken, crushed pineapple, panko, scallions, egg, soy sauce, sesame oil, garlic, ginger, and black pepper in a mixing bowl.
- Form the mixture into four equal patties and refrigerate for at least one hour.
- Heat a nonstick grill pan over medium heat and cook the patties for 5 minutes on each side until cooked through.
- Mix cornstarch and water to create a slurry, then combine remaining sauce ingredients in a saucepan and bring to a boil.
- Add the slurry to the sauce, stir, and cook until thickened, then remove from heat.
- Grill pineapple slices in the same pan until warm.
- Assemble the burgers with lettuce, cooked patties, teriyaki sauce, and grilled pineapple on buns.
