Hawaiian Chicken Burger

Ingredients

The burgers

  • 2 lbs ground chicken
  • ½ cup soy sauce
  • ¼ cup coconut milk
  • ½ – 1 cup Panko bread crumbs
  • ½ cup diced sweet onion
  • 2.5 cups sliced scallions
  • 1 clove garlic (minced)
  • to taste olive oil
  • 1 whole pineapple (cut in rings)

The Pineapple Sriracha Mayo Sauce

  • 4 tsp mayonnaise
  • 1 tsp fresh lime juice
  • 2–3 rings fresh pineapple (crushed)
  • 1 tsp Sriracha sauce
  • a pinch pepper
  • a handful sliced scallions

Instructions

  1. Combine diced onions, scallions, minced garlic, soy sauce, coconut milk, and ground chicken in a large mixing bowl.
  2. Mix by hand and gradually add Panko bread crumbs until the mixture can form patties.
  3. Brush grill grates with olive oil and cook the patties, ensuring not to turn them too often for a good sear.
  4. Cook until fully done, reaching an internal temperature of at least 165°F.
  5. While the burgers are grilling, prepare the Pineapple Sriracha Mayo Sauce by mixing mayonnaise, lime juice, pepper, and scallions.
  6. Whisk the sauce together and season with salt if needed.
  7. Serve the burgers topped with the sauce and a pineapple ring, optionally on slider or Hawaiian rolls.
