Instructions
- Combine diced onions, scallions, minced garlic, soy sauce, coconut milk, and ground chicken in a large mixing bowl.
- Mix by hand and gradually add Panko bread crumbs until the mixture can form patties.
- Brush grill grates with olive oil and cook the patties, ensuring not to turn them too often for a good sear.
- Cook until fully done, reaching an internal temperature of at least 165°F.
- While the burgers are grilling, prepare the Pineapple Sriracha Mayo Sauce by mixing mayonnaise, lime juice, pepper, and scallions.
- Whisk the sauce together and season with salt if needed.
- Serve the burgers topped with the sauce and a pineapple ring, optionally on slider or Hawaiian rolls.
