Roasted Cauliflower Hummus

Ingredients

The base

  • 1 head cauliflower
  • 1 tablespoon avocado oil
  • to taste salt
  • to taste pepper

The flavorings

  • 1 teaspoon minced garlic
  • ¼ cup fresh lemon juice
  • cup tahini
  • 1 teaspoon ground cumin
  • for serving Everything seasoning, Za'atar, or sesame seeds

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Arrange the cauliflower florets on the baking sheet and drizzle with avocado oil, tossing to coat. Season with salt and pepper.
  3. Bake the cauliflower for 20 minutes until fork tender.
  4. Transfer the baked cauliflower to a food processor and add the minced garlic, lemon juice, tahini, and cumin. Process until smooth, about 2 minutes.
  5. If a thinner consistency is desired, add additional lemon juice or water, one tablespoon at a time, until the desired consistency is reached.
  6. Sprinkle with seasoning and serve with sliced vegetables or crackers.
