Instructions
- Preheat the oven to 400°F and grease a nonstick baking sheet.
- Toss the cauliflower with 2 tbsp of olive oil and spread it in a single layer on the baking sheet.
- Roast the cauliflower for about 35-45 minutes until it is browned and very soft.
- In a blender or food processor, combine the roasted cauliflower, lemon juice, remaining olive oil, tahini, garlic, sea salt, cumin, and paprika.
- Blend until very smooth, scraping down the sides as needed.
- If the mixture is too thick, add water one tablespoon at a time until the desired consistency is reached.
