Keto Cauliflower Hummus

Ingredients

The base

  • 4 cups Cauliflower florets
  • ½ cup Tahini paste
  • 2 cloves Garlic
  • 2 tbsp Lemon juice
  • 1 tsp Sea salt
  • 1 ½ tsp Cumin
  • ¼ tsp Paprika
  • 3-5 tbsp Water

The oil

  • ¼ cup Extra virgin olive oil

Instructions

  1. Preheat the oven to 400°F and grease a nonstick baking sheet.
  2. Toss the cauliflower with 2 tbsp of olive oil and spread it in a single layer on the baking sheet.
  3. Roast the cauliflower for about 35-45 minutes until it is browned and very soft.
  4. In a blender or food processor, combine the roasted cauliflower, lemon juice, remaining olive oil, tahini, garlic, sea salt, cumin, and paprika.
  5. Blend until very smooth, scraping down the sides as needed.
  6. If the mixture is too thick, add water one tablespoon at a time until the desired consistency is reached.
