Roasted Cauliflower Hummus

Instructions
- Preheat the oven to 450°F (230°C) and prepare a baking sheet.
- Remove florets from the cauliflower and chop into smaller pieces.
- Drizzle the cauliflower with ½ tablespoon of olive oil and rub it all over.
- Place the cauliflower on the lined baking sheet and roast for 15 minutes.
- Let the roasted cauliflower cool for about 5 minutes before adding it to a food processor.
- Add roasted garlic, sea salt, black pepper, cumin, and lime juice to the food processor.
- Blend on high while slowly streaming in tahini until combined.
- Continue blending and slowly stream in ice cold water until the mixture is smooth and creamy.
- Taste and adjust seasoning as needed, then blend again to incorporate.
- Serve with veggies and crackers.
