Roasted Cauliflower Hummus

Ingredients

  • 2 ½ cups cauliflower
  • 1 ½ tablespoons olive oil
  • 4 cloves roasted garlic
  • ½ teaspoon sea salt
  • teaspoon ground black pepper
  • ½ teaspoon cumin
  • juice of 1 lime
  • ¼ cup tahini
  • ½ cup ice cold water

Instructions

  1. Preheat the oven to 450°F (230°C) and prepare a baking sheet.
  2. Remove florets from the cauliflower and chop into smaller pieces.
  3. Drizzle the cauliflower with ½ tablespoon of olive oil and rub it all over.
  4. Place the cauliflower on the lined baking sheet and roast for 15 minutes.
  5. Let the roasted cauliflower cool for about 5 minutes before adding it to a food processor.
  6. Add roasted garlic, sea salt, black pepper, cumin, and lime juice to the food processor.
  7. Blend on high while slowly streaming in tahini until combined.
  8. Continue blending and slowly stream in ice cold water until the mixture is smooth and creamy.
  9. Taste and adjust seasoning as needed, then blend again to incorporate.
  10. Serve with veggies and crackers.
