Easy Cauliflower Hummus

The cauliflower

cauliflower, cut into florets (about 6 cups florets)

avocado oil

The rest

lemon juice (about ½ lemon)

nutritional yeast

tahini

jar
roasted peppers, drained (12-16 oz)

olive oil (+/- more to taste)

chopped parsley (optional topping)
Instructions
- Preheat the oven to 400°F and line a baking sheet with parchment paper.
- Cut the cauliflower into florets and place them on the baking sheet along with the garlic cloves.
- Drizzle with avocado oil and season with smoked paprika and sea salt, then toss to coat.
- Roast in the oven for 20 minutes.
- Once cooked, transfer the cauliflower to a food processor or blender (allow to cool first if desired).
- Add the remaining ingredients to the processor/blender and blend until smooth and creamy.
- If the consistency is too thick, add more oil to thin it out as needed.
- Taste and season with additional salt and pepper if necessary.
- Transfer to a bowl, cover, and refrigerate to cool.
- Serve topped with chopped parsley if desired.
