Easy Cauliflower Hummus

Ingredients

The cauliflower

  • 1 head cauliflower, cut into florets (about 6 cups florets)
  • 3 cloves garlic, peeled
  • 2 tbsp avocado oil
  • 1 tsp smoked paprika
  • ¼ tsp sea salt

The rest

  • 2 tbsp lemon juice (about ½ lemon)
  • ¼ cup nutritional yeast
  • ¼ cup tahini
  • 1 jar roasted peppers, drained (12-16 oz)
  • 2 tbsp olive oil (+/- more to taste)
  • to taste chopped parsley (optional topping)

Instructions

  1. Preheat the oven to 400°F and line a baking sheet with parchment paper.
  2. Cut the cauliflower into florets and place them on the baking sheet along with the garlic cloves.
  3. Drizzle with avocado oil and season with smoked paprika and sea salt, then toss to coat.
  4. Roast in the oven for 20 minutes.
  5. Once cooked, transfer the cauliflower to a food processor or blender (allow to cool first if desired).
  6. Add the remaining ingredients to the processor/blender and blend until smooth and creamy.
  7. If the consistency is too thick, add more oil to thin it out as needed.
  8. Taste and season with additional salt and pepper if necessary.
  9. Transfer to a bowl, cover, and refrigerate to cool.
  10. Serve topped with chopped parsley if desired.
