Vegan Roasted Cauliflower Hummus

Ingredients

The base

  • 1 medium head cauliflower
  • 1 clove garlic

The dressing

  • cup tahini
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • to taste salt
  • to taste pepper

For garnish and serving

  • lemon wedges
  • olive oil
  • parsley
  • pita bread
  • fresh veggies

Instructions

  1. Preheat the oven to 400°F and prepare a baking sheet.
  2. Place the cauliflower florets on the baking sheet and spray with oil.
  3. Roast the cauliflower for 40 minutes, stirring halfway through.
  4. Allow the roasted cauliflower to cool.
  5. In a food processor, combine the cooled cauliflower, garlic, tahini, lemon juice, olive oil, salt, and pepper. Process until smooth.
  6. Adjust the consistency with water if needed.
  7. Drizzle with olive oil and sprinkle with parsley before serving.
  8. Serve with lemon wedges, pita bread, and fresh veggies.
