Vegan Roasted Cauliflower Hummus

Instructions
- Preheat the oven to 400°F and prepare a baking sheet.
- Place the cauliflower florets on the baking sheet and spray with oil.
- Roast the cauliflower for 40 minutes, stirring halfway through.
- Allow the roasted cauliflower to cool.
- In a food processor, combine the cooled cauliflower, garlic, tahini, lemon juice, olive oil, salt, and pepper. Process until smooth.
- Adjust the consistency with water if needed.
- Drizzle with olive oil and sprinkle with parsley before serving.
- Serve with lemon wedges, pita bread, and fresh veggies.
