Ingredients

  • 1 large head cauliflower, chopped into florets
  • ½ cup tahini
  • ¼ cup olive oil
  • 2 cloves garlic, minced
  • 4 tablespoons lemon juice
  • ½ teaspoon salt
  • ½ teaspoon smoked paprika
  • ½ teaspoon cumin
  • ¼ cup water

Instructions

  1. Steam, microwave, or roast the cauliflower florets until tender and set aside to cool.
  2. In a high-speed blender or food processor, blend the tahini and olive oil until smooth.
  3. Add the cooked cauliflower, garlic, lemon juice, salt, smoked paprika, cumin, and water to the blender.
  4. Blend until just combined, adjusting the consistency with more water if needed.
  5. Taste and adjust seasoning if necessary.
  6. Transfer to a serving dish and serve immediately.
